Toasted Coconut Pineapple Cocktail + Whereabouts + OOTDs + Serena & Lily Sale

 
After my pineapple love on Tuesday’s post, I wanted to find a tasty cocktail this week with pineapples and coconut.  Not necessarily a piña colada per se, but something kind of like it.  The one I found sounds pretty amazing.  May have to try this during our spring break next week!
Toasted Coconut Pineapple Cocktail
(found it here)
1/2 cup shredded coconut for the rim (I toasted it in the oven for a few minutes until golden brown)
1/4 cup freshly-squeezed orange juice
1/4 cup coconut rum
1 1/4 ounce dark rum
1/2 cup pureed pineapple (puree the pineapple you carved out of the middle)
Feel free to add a dash of sugar or simple syrup if you like it sweeter.
Shake all of the ingredients in a cocktail shaker with ice for 20 seconds.
Then strain into the pineapple filled with ice.
Garnish the edge of the pineapple with the toasted coconut.
The best way to remove the middle is to cut a circle in the middle, leaving about a 1/2 inch rim around the sides. Then cut the middle part diagonally and carve it out.

I know I sound crazy, but I’ve kind of enjoyed the rain this week.  It means all the pollen is being washed away.  So good for my allergies!  I know it’ll come back again, but it’s nice to get a break from the red, itchy eyes.  Thankfully, I’ve been getting shots since I was six, otherwise I know my congestion and breathing would be a nightmare during all of this.
 Last Thursday, we had the best time watching all of the basketball games.  Our Tarheels had a big win, so they played again on Saturday night and won that one too!  Showed my support in this Carolina blue old J.Crew swing sweater.
I know some of you ask what nail polish I use.  This one is called Essie Bottle Service, a very neon pink.  I’m about to run out and can’t find anyone that still carries it.  If you’ve got another good neon pink polish you love, please share!

Saturday was Lunch at Lilly, so I had to stop by for a visit!  Aren’t you loving the multitude of prints in this pic?  I would love that rug!  I got a few things, even picked up Easter dresses for the girls.  Between these two pairs of shorts, I chose the Buttercups over the Lizas.  Lilly pairs so well with my Tory Burch Gold Miller Sandals.  Go up a half size on these.
For a pretty metallic pair with a lower price point, I also love wearing Jacks with my Lilly.  And right now, they’re on sale!  From $118 to $89!  These rarely go on sale, so this is a great deal!  I have a hard time deciding which is my favorite.  Love both the platinum and gold color.  These fit true to size.
When I posted the below pic to IG, many of you asked where my striped tote was from.  It’s the St. Anne Tote from Barrington Gifts.  I had such a hard time deciding which print I wanted for spring/summer, and am so happy I chose this classic stripe one in navy.  I have a feeling this one will be going with me everywhere this season.  I know I had someone asking where my pink top was from, and if it’s Lilly.  It’s actually J.Crew from last year.  This one is very similar to it.

As I mentioned on Friday, I headed home this past weekend to see my family.  This was the first time in ages all of my sisters and I were all together.  And the first time we were all under one roof.  We had the best time, but of course it was too short.  Since we won’t all be together for Easter, we used this time to let the kids decorate Easter eggs. hunt Easter eggs and shoot off fireworks.  Yes, you read that last one right.  My dad’s favorite thing to do.  Wheeler proclaimed this a “Spring Party” since it was the first day of spring this past Friday and insisted we end the night roasting marshmallows.  The excitement on her face when my dad was shooting off fireworks on Saturday night, I will never forget!
My mom is awesome in general, but she and my dad hosted ALL of us!  How amazing is that?  Still wishing we could have stayed longer.

 One of my Vitamix recipes I’ve been using this week.  This is the Apple Pie Ice Cream, that I mentioned on Monday’s post we make more like a smoothie.  But still tastes awesome!

Oh my goodness!  I’m so excited!  The Tarheels play tonight, and I cannot wait!  I had every intention of painting all of my nails blue to support the Heels, but decided a purple nail was necessary.  Ha!  More fun and spring-y!
