Vitamix Recipes + Outfit Inspiration

 
If you’ve been reading for awhile you’ll know that I’m the biggest fan of my Vitamix.  I received it a few years ago for my birthday, and still love using it to create so many recipes.  My favorite thing to share is how I make my creamy peanut butter by pouring an entire bag of peanuts into the blender and that’s it.  The results still amaze me.  You can add salt to taste, but I love the taste of fresh peanut butter.  I don’t know what it is, but I love to use my Vitamix more during the warm weather months.  Something about a nice, fresh-tasting smoothie on a hot day just seems so right.
Today, I’m sharing a few of my favorite Vitamix recipes that you can try too.  I know there’s a world of different types of blenders out there, but after reading reviews, this one seemed to be the best one out there.  I’ve never had trouble with mine, so I feel like I made the right choice.
I will say I’ve had people love their Magic Bullet too, but I wanted one that made more than one serving.
Basil Walnut Pesto
We love smothering bread and toast in this pesto sauce!
Ingredients
1/4 cup (60 ml) olive oil
1/4 cup (25 g) grated Parmesan cheese
2 garlic cloves, peeled
2 cups (80 g) fresh basil leaves
1/4 cup (30 g) walnuts
1 teaspoon lemon juice
1/2 teaspoon salt
Directions
Place all ingredients into the Vitamix container in the order listed and secure lid.
Select Variable 1.
Turn machine on and slowly increase to Variable 7.
Blend for 45 seconds-1 minute, using the tamper to press ingredients into the blades.
Going Green Smoothie
Ingredients
½ cup (120 ml) water
1 cup (150 g) green grapes
½ cup (85 g) pineapple chunks, core included
½ ripe banana, peeled
1 medium lime, lightly peeled
¼ cup (35 g) cashews, roasted, unsalted
1 jalapeño, seeded, quartered
2 cups (60 g) fresh spinach, lightly packed
1 cup (240 ml) ice cubes
Directions
Place all ingredients into the Vitamix container in the order listed and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10, then to High.
Blend for 1 minute or until desired consistency is reached.
Thin Crust Pizza Dough
Ingredients
3 cups (375 g) all-purpose flour
1 ¾ teaspoons instant fast-rise yeast
1 ¼ teaspoons salt
8-11 ounces (240-325 ml) hot water
3 ¾ teaspoons olive oil
Directions
Preheat oven to 425° (220° C).
Place flour, yeast and salt into the Vitamix container in the order listed and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10. Blend for 5 seconds. Turn machine off and remove lid plug.
Select Variable 6.
Use the On/Off switch to quickly pulse about 30 short times in 25 seconds while slowly adding oil and water through the lid plug opening. Remove lid and use a spatula to scrape the dough off the sides.
Secure the lid and continue pulsing another 30 times until a ball forms.
After ball has formed, Pulse continuously for 10 to 15 seconds
With floured hands, remove dough and form into a round ball. Place in a greased bowl, tuning over to grease all around. Let rise 10 minutes for a thin crust. Divide dough in two and stretch each ball into a 12-inch (30 cm) pizza crust and top as desired. Bake for 12 to 15 minutes.

Apple Pie Ice Cream
Sometimes ours comes out more like a milkshake, but it’s still so good!
Ingredients
3 ounces (89 ml) frozen apple juice concentrate
1/4 cup (60 g) low fat vanilla yogurt
1/2 (70 g) apple, cored, seeded quartered
1 Tablespoon vanilla extract
1/4 teaspoon ground cinnamon
1/2 (65 g) ripe banana
3 cups (720 ml) ice cubes
Directions
Place all ingredients into the Vitamix container in the order listed and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10, then to High. Use the tamper to press ingredients into the blades while processing.
In about 30 seconds, the sound of the motor will change and four mounds should form in the mixture. Stop machine. Do not over mix or melting will occur. Serve immediately.
Pina Colada?
Yes, please.
Ingredients
1 ounce (30 ml) light rum
1 ounce (30 ml) cream of coconut
1/4 cup (40 g) fresh pineapple chunks
1/2 cup (120 ml) milk
1/2 cup (120 ml) ice cubes
Directions
Place all ingredients into the Vitamix container in the order listed and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10, then to High.
Blend for 30 seconds or until desired consistency is reached.

  1. Thank you for sharing your Vitamix recipes! I have been wanting to make my own peanut butter. I have the Vitamix 750. Can I make the peanut butter without the dry blade (I have the wet blade)?
